Sambar
South Indian lentil stew with tamarind and vegetables.

Ingredients
- 1 cup Toor Dal
- 1 cup Mixed Vegetables (drumstick, carrots, pumpkin)
- 2 tbsp Sambar Powder
- 1 small piece Tamarind
- 1 tbsp Jaggery
- For Tempering: Oil, Mustard Seeds, Curry Leaves
Instructions
- Pressure cook Toor Dal. Cook vegetables separately.
- Soak tamarind in warm water and extract the juice. Add tamarind juice, sambar powder, and jaggery to the cooked vegetables.
- Add the mashed dal and simmer. Prepare tempering with oil, mustard seeds, and curry leaves and pour over the sambar.
