Mixed Dal Sprout Curry
A highly nutritious vegan curry made from mixed sprouted lentils and spices.

Ingredients
- 2 cups Mixed Sprouted Dals (Moong, Moth, etc.)
- 1 Onion, pureed
- 1 cup Tomato Puree
- 1 tsp Ginger-Garlic Paste
- 1 tsp Coconut Oil
- 1/2 tsp Garam Masala
Instructions
- Lightly steam the mixed sprouts for 5-7 minutes until they are slightly softened but still have a crunch. Set aside.
- Heat coconut oil in a pan. Sauté the onion puree until it changes color.
- Add ginger-garlic paste and tomato puree. Cook until the masala thickens.
- Add the steamed sprouts, garam masala, salt, and a little water. Simmer for 10 minutes for the flavors to combine.
