Mixed Dal Sprout Curry

A highly nutritious vegan curry made from mixed sprouted lentils and spices.

Mixed Dal Sprout Curry

Ingredients

  • 2 cups Mixed Sprouted Dals (Moong, Moth, etc.)
  • 1 Onion, pureed
  • 1 cup Tomato Puree
  • 1 tsp Ginger-Garlic Paste
  • 1 tsp Coconut Oil
  • 1/2 tsp Garam Masala

Instructions

  1. Lightly steam the mixed sprouts for 5-7 minutes until they are slightly softened but still have a crunch. Set aside.
  2. Heat coconut oil in a pan. Sauté the onion puree until it changes color.
  3. Add ginger-garlic paste and tomato puree. Cook until the masala thickens.
  4. Add the steamed sprouts, garam masala, salt, and a little water. Simmer for 10 minutes for the flavors to combine.
