Masoor Dal with Spinach

A simple and iron-rich vegan dal combining red lentils and fresh spinach.

Masoor Dal with Spinach

Ingredients

  • 1 cup Masoor Dal
  • 3 cups chopped Spinach
  • 1 Onion, chopped
  • 2 Tomatoes, chopped
  • 4 cloves Garlic, minced
  • 1 tbsp Coconut Oil

Instructions

  1. Rinse masoor dal. In a pot, cook the dal with water, turmeric and salt.
  2. In a separate pan, heat coconut oil. Sauté garlic and onions.
  3. Add tomatoes and cook until soft. Then add the chopped spinach and cook until wilted.
  4. Pour the spinach mixture into the cooked dal. Mix well and simmer for 5 minutes.
