Masoor Dal with Spinach
A simple and iron-rich vegan dal combining red lentils and fresh spinach.

Ingredients
- 1 cup Masoor Dal
- 3 cups chopped Spinach
- 1 Onion, chopped
- 2 Tomatoes, chopped
- 4 cloves Garlic, minced
- 1 tbsp Coconut Oil
Instructions
- Rinse masoor dal. In a pot, cook the dal with water, turmeric and salt.
- In a separate pan, heat coconut oil. Sauté garlic and onions.
- Add tomatoes and cook until soft. Then add the chopped spinach and cook until wilted.
- Pour the spinach mixture into the cooked dal. Mix well and simmer for 5 minutes.
