Masoor Dal Soup

A high-protein, light, and comforting vegan soup made from red lentils.

Ingredients

  • 1 cup Masoor Dal
  • 4 cups Vegetable Broth
  • 1 Onion, chopped
  • 1 Carrot, chopped
  • 1 Celery Stalk, chopped
  • 2 cloves Garlic
  • 1 tbsp Olive Oil

Instructions

  1. Heat olive oil in a pot and sauté onion, carrot, celery, and garlic until softened.
  2. Add the rinsed masoor dal and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15-20 minutes until lentils are very tender.
  4. Blend the soup until smooth, season with salt and pepper, and serve hot.
