Masoor Dal Soup
A high-protein, light, and comforting vegan soup made from red lentils.

Ingredients
- 1 cup Masoor Dal
- 4 cups Vegetable Broth
- 1 Onion, chopped
- 1 Carrot, chopped
- 1 Celery Stalk, chopped
- 2 cloves Garlic
- 1 tbsp Olive Oil
Instructions
- Heat olive oil in a pot and sauté onion, carrot, celery, and garlic until softened.
- Add the rinsed masoor dal and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15-20 minutes until lentils are very tender.
- Blend the soup until smooth, season with salt and pepper, and serve hot.
