Lemon Moong Dal Soup
A tangy, light, and detox-style soup made from yellow moong dal.

Ingredients
- 1 cup Yellow Moong Dal
- 5 cups Water or Vegetable Broth
- 1 tsp grated Ginger
- 1/2 tsp Turmeric
- Juice of 2 Lemons
- Freshly ground Black Pepper
- Chopped Coriander for garnish
Instructions
- Pressure cook the moong dal with water/broth, ginger, turmeric, and salt until very soft.
- Whisk the dal well or use an immersion blender to get a smooth, soup-like consistency.
- Bring the soup to a simmer. Turn off the heat.
- Stir in the fresh lemon juice and black pepper. Garnish with coriander and serve hot.
