Lemon Moong Dal Soup

A tangy, light, and detox-style soup made from yellow moong dal.

Ingredients

  • 1 cup Yellow Moong Dal
  • 5 cups Water or Vegetable Broth
  • 1 tsp grated Ginger
  • 1/2 tsp Turmeric
  • Juice of 2 Lemons
  • Freshly ground Black Pepper
  • Chopped Coriander for garnish

Instructions

  1. Pressure cook the moong dal with water/broth, ginger, turmeric, and salt until very soft.
  2. Whisk the dal well or use an immersion blender to get a smooth, soup-like consistency.
  3. Bring the soup to a simmer. Turn off the heat.
  4. Stir in the fresh lemon juice and black pepper. Garnish with coriander and serve hot.
