Dal Veg Stew
A light and fragrant coconut-flavored lentil and vegetable stew.

Ingredients
- 1/2 cup Toor Dal
- 1/2 cup Masoor Dal
- 2 cups Mixed Vegetables (Carrot, Beans, Peas)
- 1 cup Light Coconut Milk
- 1 tsp Ginger, grated
- Tempering: Coconut Oil, Mustard Seeds, Curry Leaves
Instructions
- Cook both dals and vegetables together in a pot with water, ginger, and salt until everything is soft.
- Stir in the light coconut milk and bring to a gentle simmer. Do not boil.
- In a separate small pan, prepare the tempering with coconut oil, mustard seeds, and curry leaves.
- Pour the tempering over the stew and serve hot.
