Dal Veg Stew

Ingredients

  • 1/2 cup Toor Dal
  • 1/2 cup Masoor Dal
  • 2 cups Mixed Vegetables (Carrot, Beans, Peas)
  • 1 cup Light Coconut Milk
  • 1 tsp Ginger, grated
  • Tempering: Coconut Oil, Mustard Seeds, Curry Leaves

Instructions

  1. Cook both dals and vegetables together in a pot with water, ginger, and salt until everything is soft.
  2. Stir in the light coconut milk and bring to a gentle simmer. Do not boil.
  3. In a separate small pan, prepare the tempering with coconut oil, mustard seeds, and curry leaves.
  4. Pour the tempering over the stew and serve hot.
