Dal Soup (Continental Style)
A smooth and elegant red lentil soup flavored with herbs and olive oil.

Ingredients
- 1 cup Masoor Dal
- 4 cups Vegetable Broth
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 tbsp Olive Oil
- 1 tsp Dried Thyme or Rosemary
- Salt and Black Pepper
Instructions
- In a pot, heat olive oil and sauté onion and garlic until soft.
- Add the rinsed masoor dal, vegetable broth, and dried herbs. Bring to a boil.
- Reduce heat and simmer for 15-20 minutes, or until the lentils are completely tender.
- Use an immersion blender to blend the soup until smooth and creamy. Season with salt and pepper. Serve with a drizzle of olive oil.
