Dal Soup (Continental Style)

A smooth and elegant red lentil soup flavored with herbs and olive oil.

Ingredients

  • 1 cup Masoor Dal
  • 4 cups Vegetable Broth
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tbsp Olive Oil
  • 1 tsp Dried Thyme or Rosemary
  • Salt and Black Pepper

Instructions

  1. In a pot, heat olive oil and sauté onion and garlic until soft.
  2. Add the rinsed masoor dal, vegetable broth, and dried herbs. Bring to a boil.
  3. Reduce heat and simmer for 15-20 minutes, or until the lentils are completely tender.
  4. Use an immersion blender to blend the soup until smooth and creamy. Season with salt and pepper. Serve with a drizzle of olive oil.
