Dal Dhokla
A soft, spongy, and steamed savory cake made from fermented chana dal batter.

Ingredients
- 1 cup Chana Dal
- 1/4 cup Rice
- 1 tsp Ginger-Chili Paste
- A pinch of Turmeric
- 1 tsp Fruit Salt (Eno)
- For tempering: Oil, Mustard Seeds, Curry Leaves
Instructions
- Soak chana dal and rice for 4-5 hours. Grind into a batter and let it ferment overnight.
- Add ginger-chili paste, turmeric, and salt to the batter. Just before steaming, add fruit salt and mix gently.
- Pour into a greased steaming tray and steam for 15-20 minutes.
- Top with a tempering of oil, mustard seeds, and curry leaves. Cut into squares and serve.
