Chana Dal Vada
South Indian-style spiced lentil fritters that are crunchy and savory.

Ingredients
- 1 cup Chana Dal, soaked
- 2 Dried Red Chilies
- 1 Onion, finely chopped
- A few Curry Leaves
- 1 tsp Fennel Seeds
- Oil for deep frying
Instructions
- Soak chana dal for 2 hours. Drain completely and grind coarsely with red chilies and fennel seeds (do not add water).
- Mix in the chopped onion and curry leaves. Add salt.
- Shape small, flat discs from the mixture.
- Deep fry in hot oil until they are deep golden brown and crispy.
